INGREDIENTS:
- 2 eggs
- 1 cup sugar (225 g)
- ¼ cup oil (60 ml)
- 1 teaspoon vanilla essence
- 1 teaspoon of orange
- 2 cups flour (220 g)
- 1 teaspoon baking powder
- ½ teaspoon salt
- 4 tablespoons orange zest
- 1 teaspoon of crushed star anise
Mix eggs and sugar until combined, for 5 minutes. Add the oil and essences, mix well. Add the flour, sifted with baking powder and salt. Finally add the star anise and orange peel. You’ll have thick, slightly sticky dough.
Preheat oven to 325F (170 C). Lightly flour the working board. Divide the dough in two equal parts and shape each part into a log about 1 1/2 inches in diameter and 10 inches long. Place logs a tray lined with baking sheet, 3 inches apart. Bake for 30 minutes, until golden. Rotate the sheets 180 degrees halfway through the baking time to ensure even browning.
Take out of the oven and let logs cool slightly on a rack. Reduce the oven temperature to 200°F. With a serrated knife, slice logs into 1/4-inch-wide slices. Lay the slices in the baking tray and bake for an additional 10 min on each side, until they are toasted, dry, and crisp.
