I would also say that the Fusilli con Rapini (Fusilli with Broccoli Rabe), Risotto Verde (Risotto Green with Spinach) and especially the Pasta e Fagioli (Pasta with Beans, Pancetta and Tomatoes) are the ultimate comfort foods and chock full of healthy vitamins. I sure felt good with what my family was eating when I served these dishes.

The Petto di Pollo ai Ferri (Grilled Chicken Breast) was also good but the Costoletta di Maiale alla Pizzaiola (Braised Pork Chops with Tomato and Garlic Sauce) screams Italian flare, my mouth is watering just writing about these succulent meals we have enjoyed. 

I sure hope that there is a sequel to the healthy Italian cooking book; I would be thrilled to build a recipe library on meals such as these.  I have fed family and friends many of these meals and they have asked for seconds, asked for the recipes and have complimented me many times over.  I sure made a good impression cooking these healthy Italian meals.

I have tried many of your recipes, like COSTOLETTA DI MAIALE ALLA PIZZAIOLA (Braised Pork Chops with Tomato and Garlic Sauce), SCALOPPINE AL MARSALA (Sauteed Veal Scallops with Marsala Sauce), PASTA PRIMAVERA (Pasta with Fresh Vegetables and Cheese Sauce), and COSTOLETTA DI MAIALE ALLA MODENESE (Pork Chops Braised in White Wine), etc.

They were very easy and they took almost the same time indicated in the recipes. My family and I love it. The food was amazing. Did we have seconds? You bet we did, who would not?

On the weekend I tried a few recipes and they were pretty good.  Overall they are easy to follow and very tasty. I tried the BRUSCHETTA CLASSICA (Grilled Garlic and Oregano Bread), along with the ZUPPA DI COZZE (Mussel Soup).  And I also made the PEPERONATA (Braised Sweet Peppers with Tomatoes and Onions) along with some PETTO DI POLLO AI FERRI (Grilled Chicken Breast).

Everyone ate it and enjoyed it.  The recipes are not that difficult to follow and taste great.  If the rest of the book is like these recipes then it will be a hit for sure. 

Timing wise I wasn’t really paying too much attention to the time spent, but I would probably say that it was pretty close to the stated times.
