There are 3 main reasons why carbs does more harm than good…
Reason #1 – Carbs cause blood sugar disruption, increases AGING, and weight gain
Before I tell you why carbs can actually speed up the aging process in your body, let’s clarify some simple biochemistry in your body…
This deals with “glycation” in your body, and substances called Advanced Glycation End Products (AGEs). These nasty little compounds called AGEs speed up the aging process in your body including damage over time to your organs, your joints, and of course, wrinkled skin.
So with that said, what is one of the biggest factors that increase production of AGEs inside your body?
This may surprise you, but high blood sugar levels over time dramatically increase age-accelerating AGEs in your body.
This is why type 2 diabetics many times appear that they have not aged well and look older than their real age. But this age-increasing effect is NOT just limited to diabetics.
So, let’s get back to how “carbs” relate to this…
Some types of carbohydrates — white flour, white rice, and foods made with added sugar — contain small molecules of glucose that are easy to digest, so they enter the bloodstream quickly. When blood sugar spikes, insulin is released to remove the excess sugar. While that’s a critical job, it can lead to weight gain.
When there’s too much sugar in your bloodstream, and insulin can’t restore balance by transporting sugar to cells for energy, it sends messages to the liver that it’s time to store fat. After the glycogen stores are filled, the liver turns glucose into triglycerides that are stored in adipose tissue. But insulin doesn’t stop there. It also tells the fat cells to stop breaking down fat that’s already in storage. In other words, insulin prevents you from losing weight while also making you more prone to gaining weight.
People who are pre-diabetic or who have had stomach surgery may have reactive hypoglycemia, which means the pancreas sends too much insulin into the bloodstream after eating. As a result, too much glucose is removed and the blood sugar drops below normal levels. Even if your last meal wasn’t that long ago, low blood sugar makes you feel hungry, and you’re more likely to overeat.
Reason #2 – You Will Be Continuously Hungry
Refined carbohydrates, such as white bread, cookies and pretzels, may taste good, but they tend to make you feel hungry shortly after you eat them. They also provide few nutrients, so it’s smart to limit these foods in your diet. You still need carbs, however; the key is to choose nutritious options that don’t cause such cravings.
Sugars and refined grains are digested rapidly, creating a sharp rise in blood sugar levels. In response, your body pumps out a large dose of the hormone insulin, which causes your blood sugar to drop quickly. This crash leaves you feeling sluggish and hungry, so you may crave more carbohydrates to replenish your energy. This can create a cycle of overeating that’s often difficult to break.
Along with affecting insulin levels, refined carbohydrates may also affect your brain, according to a study published in “The American Journal of Clinical Nutrition” in 2013. On two separate occasions, researchers gave participants a meal of high-glycemic-index foods — those that create a significant rise in blood sugar — and a meal of low-GI foods, which have less of an effect on blood sugar. They found that after the high-GI meal, subjects were hungrier and showed greater activity in brain regions associated with reward and cravings.
Reason #3 – Lack of Nutrients
Antinutrients are natural or synthetic compounds found in a variety of foods — especially grains, beans, legumes and nuts — that interfere with the absorption of vitamins, minerals and other nutrients. They can even get in the way of the digestive enzymes, which are key for proper absorption. Antinutrients can also be found in plant roots, vegetables, leaves and fruits, although these are at much lower levels and usually have benefits as opposed to mostly harmful effects.
Many different types of “seed” foods contain antinutrients like phytic acid, leptins and saponins naturally, including some that you probably don’t even realize are seeds (for example, all grains are really the seeds of cereal grasses). The reason they contain these compounds that bind to vitamins and minerals, making them unabsorbable, is largely as a defense mechanism. Their antinutrients help repel pests, bugs and other predators so the seeds are able to live on and reproduce.
