Back, in 2007 my Mom and I werent getting along so I moved in with my Dad and his new wife in South Florida at the height of the real estate bubble and beginning of the recession. I was making $8.75 at CENSORED which averaged to what felt like $5.00 after tax.
On top of that I didn’t have a car, I was skinny 117 lbs, had braces, NEVER had a boyfriend and at $5.00 an hour awesome nights at Seminole Hard Rock was OUT of the question..
Living in Florida was supposed to be like an episode of Nip/Tuck…
Reality was that I would be sitting at the bus stop 6am to go to BC while other kids whizzed by in their BMW’s.
Rest in peace to my EGO… While I was at work I would talk to this older kid Edgar that would tell me about how he made $300 the night before working at Season’s 52 in Galleria.
(He was working 2 jobs because he wrecked his car)
He would tell me about his friends that worked at places like Joes Stone Crab, PRIME112 and CLUB LIV in Miami and would make $1,000’s a month.
(Miami has a automatic 20% gratuity)

He told me how to get started in serving and 2 weeks later I got a job at CENSORED a low end establishment BUT one of the BEST places to learn how to juggle tables.
My first night I brought home $80 in 5 hours.
Wow… that equaled to about $16 an hour. With more $$$ in a shorter amount of time I could concentrate more on school and have money left over to actually have a social life.
While at work I ALWAYS made sure to ask co-workers questions and make friends in my down time with the TOP SERVERS.
I learned a LOT… Quickly… Then one day I got fired… (story inside)
Enter panic mode. My Dad, step mom and step sister were out on a cruise for a week. This was at the beginning of the 08’ financial meltdown… Not even McDonalds would hire me. I’m SERIOUS…
I was living off of fruit and using change to fill my gas tank. (I was determined to stick it out and NOT ask my parents for ANYTHING)
It sucked soo bad… Oooh I hated that feeling SO I used that energy to fuel my search for another job.
TIP - When looking for a restaurant to work for...
Look at the cars in the parking lot or valet.
This will tell you what kind of tips you will be getting...
After getting fired from CENSORED
I went on to check out CENSORED for a waitress position.
In one row there was a Bentley, Mercedes and a BMW. $500K in cars ? And they even had valet ?
Hmmmm… THIS is where I need to be !
My desperation fueled my confidence in which my BS skills had grown, I ended up getting an interview on the spot.
On my first week of training I saw Rick Ross the biggest boss dining in section D1…
That’s when the $300-$360 weekends nights started to happen.
PLUS food was half priced when I worked my shift ! What !! $11 Filet mignon ? Talk about awesome..

I remember when Joey Porter of the Miami Dolphins would dine at CENSORED after the Dolphins would win a home football game... He would run up a $3,000+ bill with 20+ guests and a co-worker and I would team up end up making an automatic 18% ($660 TIP) since the party was over 8 people...
He would even buy rounds of Patron for tables around him since he and his boys would get a little rowdy… Which equaled into a higher tip for me… (Thanks Joey ! – GO DOLPHINS !)

I’ve had your typical rich guy that looks the part hand me a BASIC green Amex after AMAZING service and tip 10%.
