[]Dear fellow parent,

If you experience any of these struggles:

Getting your children to eat nutritious food Finding time to prepare healthy snacks and meals for your family Making sense of the overwhelming sea of information on what is good for you
Or, if any of these are on your wish list:

A desire to give your children a healthy start in life Kids who love cooking and can prepare their own food Inspiring recipes that actually make you want to cook
Fairytale Food Safari is the cookbook
you have been looking for!

I began a journey towards a greater understanding of nutrition in my early 20s and when my husband Mitchell and I had children, I did all I could to find out the best way to give Ethan and Ryan a healthy start. I read, studied, cooked, gardened, shopped, cooked and cooked some more. It has been loads of fun and I have learned so much. I want to share what I have learned and tell you about the benefits it has brought to our family.

But it didn’t all come easy. We had many problems along the way. Maybe you can relate to some of these?
A fussy child who decided he didn’t like a meal as soon as he looked at it. A child who changed his mind about what he liked from one day to the next (oh and he has a will of iron to go with it) Tummy problems, allergies and sensitivities Financial concerns about the cost of going organic Confusion about all of the conflicting information about what is healthy and what isn’t Trouble with getting the kids to understand why they weren’t eating the sugary treats the other kids were eating AND, fitting it all in! How to provide healthy food for all snacks and meals and still have a life!
[]
As an interesting aside…This is how my son, Ryan use to be with healthy foods, particularly salads. However when I was asking him to pose for this photo, he kept eating the salad! I had to wait for him to finish his mouthful before I took each shot. Afterwards, he finished the whole lot.

So here I was, trying to do what sounded like an easy thing and I just kept hitting obstacles!
First of all, finding out about healthy ways to feed children…. I had to wade through many books, articles and Internet information. I listened to naturopaths and “experts” to find out what was what. Problem is most of them had conflicting information with some similarities. Then when I finally worked out what to make and came up with tasty recipes, my boys weren’t always as excited as I was! Especially when we were with other people and the other kids got to eat out of packets. How to inspire them to have the same vision as me? Oh and the sensitivities and allergies – as I worked my way through having those things healed, I needed recipes that were yummy but didn’t contain some of the aggravating ingredients such as wheat and dairy.
So it has not all been fun…but the benefit that has come from this sometimes frustrating road I have been down is that now I have some gems to share! My children are happy, healthy and actually want to eat well. In fact, they are quite passionate about their way of life!

What the Experts are Saying…
The Link between IQ and Diet

[]
A study - led by University of Adelaide Public Health researcher, Dr Lisa Smithers, looked at the link between the eating habits of children at six months, 15 months and two years, and their IQ at eight years of age.The study of more than 7000 children compared a range of dietary patterns, including traditional and contemporary home-prepared food, ready-prepared baby foods, breastfeeding, and 'discretionary' or junk foods.
"Diet supplies the nutrients needed for the development of brain tissues in the first two years of life, and the aim of this study was to look at what impact diet would have on children's IQs," Dr Smithers says. "We found that children who were breastfed at six months and had a healthy diet regularly including foods such as legumes, cheese, fruit and vegetables at 15 and 24 months, had an IQ up to two points higher by age eight. Those children who had a diet regularly involving biscuits, chocolate, lollies, soft drinks and chips in the first two years of life had IQs up to two points lower by age eight. We also found some negative impact on IQ from ready-prepared baby foods given at six months, but some positive associations when given at 24 months," Dr Smithers says.
Dr Smithers says this study reinforces the need to provide children with healthy foods at a crucial, formative time in their lives. “While the differences in IQ are not huge, this study provides some of the strongest evidence to date that dietary patterns from six to 24 months have a small but significant effect on IQ at eight years of age," Dr Smithers says. "It is important that we consider the longer-term impact of the foods we feed our children," she says.

http://www.adelaide.edu.au Plant-based Diet Reduces Risk of Childhood Obesity

[]A new study confirms a conclusion that makes perfect sense. A reduction in childhood obesity, it turns out, is tied to a plant-based diet. It may seem obvious that eating low calorie fruits and vegetables is linked to reduced weight gain, but this study went further than that. It stated that specific plant-based food groups including grains, nuts, and nut butters were associated with a decreased probability of childhood obesity while animal products like dairy especially, were associated with weight gain.

The study, published in Nutrition Journal (http://www.nutritionj.com), studied 1764 healthy kids and teens. The Link Between Poor Diet and Depression, Mood Swings and other Mental Illnesses

[]
Few people are aware of the connection between nutrition and depression while they easily understand the connection between nutritional deficiencies and physical illness. Depression is more typically thought of as strictly biochemical-based or emotionally-rooted. On the contrary, nutrition can play a key role in the onset as well as severity and duration of depression. Many of the easily noticeable food patterns that precede depression are the same as those that occur during depression. These may include poor appetite, skipping meals, and a dominant desire for sweet foods.[1] Nutritional neuroscience is an emerging discipline shedding light on the fact that nutritional factors are intertwined with human cognition, behaviour, and emotions.
The most common mental disorders that are currently prevalent in numerous countries are depression, bipolar disorder, schizophrenia, and obsessive-compulsive disorder (OCD).[2] The dietary intake pattern of the general population in many Asian and American countries reflects that they are often deficient in many nutrients, especially essential vitamins, minerals, and omega-3 fatty acids.[3] A notable feature of the diets of patients suffering from mental disorders is the severity of deficiency in these nutrients.[3] Studies have indicated that daily supplements of vital nutrients are often effective in reducing patients' symptoms.[4] Supplements containing amino acids have also been found to reduce symptoms, as they are converted to neurotransmitters which in turn alleviate depression and other mental health problems.[4] On the basis of accumulating scientific evidence, an effective therapeutic intervention is emerging, namely nutritional supplement/treatment. These may be appropriate for controlling and to some extent, preventing depression, bipolar disorder, schizophrenia, eating disorders and anxiety disorders, attention deficit disorder/attention deficit hyperactivity disorder (ADD/ADHD), autism, and addiction.[4] Most prescription drugs, including the common antidepressants lead to side effects.[4] This usually causes the patients to skip taking their medications. Such noncompliance is a common occurrence encountered by psychiatrists. An important point to remember here is that, such noncompliant patients who have mental disorders are at a higher risk for committing suicide or being institutionalized. In some cases, chronic use or higher doses may lead to drug toxicity, which may become life threatening to the patient.[4] An alternate and effective way for psychiatrists to overcome this noncompliance is to familiarize themselves about alternative or complementary nutritional therapies. Although further research needs to be carried out to determine the best recommended doses of most nutritional supplements in the cases of certain nutrients, psychiatrists can recommend doses of dietary supplements based on previous and current efficacious studies and then adjust the doses based on the results obtained by closely observing the changes in t) he patient. Frequently Asked Questions:
Does Fairytale Food Safari contain recipes that include meat? No it doesn’t because I am a vegetarian. However this book is not about vegetarianism and I am not preaching that you become a vegetarian. Most children will eat meat anyway. This book is about convincing children how important it is to include plant-based foods in their diet and reduce processed, sugary foods. Will I be able to change recipes to include meat? All recipes are very flexible and adaptable and there is any number of creative suggestions included. This book is about developing creativity in younger and older cooks, foodies and those who are reluctant to be either of the above. Will my child be able to read and understand the nutritional information? The Food Safari information is aimed at children and therefore it is illustrated with bright paintings, in a larger font and written in simplistic terms. Depending on the age of your child you may need to help them to understand but overall the concepts are presented simply.
