I am a retired Home Economics teacher living on the Gold Coast,

decided three years ago to become a "raw foodist" and now eat at least
80% of my food raw. It has become very obvious to me that our cooked
and processed diet is slowly killing us. I am not advocating that
everyone follow my path however I do believe that any increase in the
amount of raw food we eat has a benefit.

Scarily the incidence of diet related conditions such as obesity,
heart failure, diabetes and osteoporosis/osteopenia is growing
alarmingly and they have all now reached epidemic proportions.
Obviously something is very wrong with the standard diet!

SO WHERE DOES CHOCOLATE COME INTO IT?

As part of my raw diet I eat the most amazingly delicious, healthy
chocolate. This is not the store-bought variety we are all used to but
a simple and easy to make chocolate using all natural ingredients.

THIS IS GAYES STORY

Hi, My name is Gaye Sheppard and I am a fit and healthy woman just on
the other side of 60. Lately I have had quite a sore lower back so
just as a precaution I decided to have a bone density test done just
to rule out the possibility of osteoporosis. I didn't think for one
moment this would apply to me as I do all the right things for my
bones like lots of dairy and exercise. However the doctor suggested it
so off I went.

Imagine how I felt when my T-score (measurement of bone density) came
back at just below the osteoporosis range. The doctor said it was very
advanced osteopenia. My initial reaction was shock and indignation!
How could this possibly be? Maybe it was a mistake! Then I became
confused and upset.

I am very proud of how fit and healthy I am. Over the years I have
watched my weight, chosen low-fat everything, had plenty of dairy for
my calcium and eaten my share of salads and fruit. I don't smoke or
drink too much. As I live a short walk from what would have to be one
of the world's most beautiful beaches it is no effort to walk nearly
every day. I was also going to the gym regularly as I was about to go
on a skiing holiday with my children so need to be fit to keep up with
them on the slopes.

So you can imagine how cheated I felt with my osteopenia diagnosis! I
thought I was doing everything right but obviously this was not the
case. What was I doing wrong? Was it too late to reverse the damage?

My mother was diagnosed with osteoporosis in her 80's and I was
scared I would be faced with a painful old age like she endured.

So it was with all these emotions swirling around me that I met
Pamela for coffee one afternoon. We have known each other for over 30
years and she was as incredulous as I was with my diagnosis. Pamela is
very passionate about nutrition and giving the body what it needs for
good health so we often have discussions about what we should and
shouldn't eat. I know I am not as "good" as her but I thought I was
healthy enough. So together Pamela and I resolved to find out where I

Armed with Julie's research, my own background in nutrition and all
the information gathered over the years I set out to solve the riddle
of Gaye's osteopenia.

all, many times over I have previously discovered that we have been
mislead in our food choices and Gaye's story proved to be no

acid producing diets are in a chronic state of low-grade metabolic
acidosis. The body adapts through dissolution of bone. Over decades,
the magnitude of a daily positive acid balance (acidic blood and
urine) may be sufficient to induce osteoporosis. Moderation of animal
food consumption and an increased ratio of vegetable to animal food
consumption may confer a fracture-protective effect."

I WORKED OUT A DIFFERENT LIFESTYLE PLAN FOR GAYE

MORE OF GAYES STORY

I was very glad to get Pamela's new plan. While she was researching
osteopenia I was also searching the internet for answers. Not really
understanding the technicalities of the condition I just got
completely confused. What I read on one site was contradicted on
another site. I really appreciated Pamela's background in nutrition as
she was able sort it all out and make sense of it.

Together we worked out a new plan for me and I was excited as I felt
that I was back on the right track.

Now when I go out in the sun, I expose my skin carefully to balance
sun exposure with sun sense.

At least I got the exercise bit right!

The hardest part for me was to start including saturated fat into my
diet. My whole adult life has been low-fat. I've even been known to
pass on a cappuccino if they didn't have skinny milk.

If it wasn't for Pamela's chocolate recipes with coconut oil in them
it would have been a lot harder to make the change. I still find it
amazing that a delicious decadent chocolate could be so good for my
bones!

I'm cutting down on cow's milk and replacing it with rice milk, now
that I know that it is actually leaching the calcium from my bones. I
have watched Pamela drink rice milk for years but stuck to cow's milk
for my bones sake. Now I know better!

I have listened to Pamela for many years talking about the need to
get my body into an alkaline state so I can achieve better health. I
feel this is one area where I am getting it right. Over the years I
have included more and more raw food into my diet and I'm really
enjoying it. I am cutting right back on processed foods especially
"junk" foods. I must admit this has been easier because I have
Pamela's chocolate recipes so I don't feel like I am missing out or
being deprived of "rewards" or the fun in life.

FROM MY RESEARCH I FOUND THAT WE NEEDED

BALANCED NUTRIENTS

It is not enough that we get enough calcium, magnesium and other
nutrients for strong bones but we need to get them in the right
balance. Too much calcium may be as bad as too little.

When our diet was less processed and we ate more fresh produce it was
easy for the body to get all the magnesium it required for strong
bones. Sadly this is NOT SO TODAY and magnesium is one of the main
mineral deficiencies in the modern world

This is what Dr Guy Abrahams M.D., gynecologist and endocrinologist
has to say about magnesium.

Dr Guy Abraham, M.D. has found strong evidence to suggest that women
with osteoporosis have a deficiency of a chemical that is made when
they take twice as much magnesium as calcium. He found that when
calcium intake was decreased it was utilized better than when it was
high. He advocates taking more magnesium to correct calcium-deficient
diseases.

The good news is my natural, healthy chocolate has the
HIGHEST MAGNESIUM COUNT of any food found in nature.

Vitamin D
To get Vitamin D from the sun we actually have to expose our body to
sunlight. We are all so conscious of sun damage and skin cancer that
when we go out in the sun we either cover up or slather sunscreen on.
The poor sun doesn't get a look in! Even in Queensland with our
beautiful sub-tropical climate and sunny days (even in winter!) people
are being diagnosed with vitamin D deficiency!

The answer is to have a balance between sun exposure and sun damage.

Healthy Fats
To metabolize bone building vitamins and minerals (especially
calcium) we actually need SATURATED FAT in our diet. What, you say -
GASP - not saturated fat that we have all been led to believe was bad
for our heart. Now it seems we have got it all wrong. It is possible
that healthy saturated fats are good for us and the unsaturated
vegetable oils may be doing us harm.

READ WHAT DR BRUCE FIFE N.D. FROM "THE COCONUT RESEARCH CENTRE" HAS
TO SAY ABOUT THE ROLE OF SATURATED FAT, SUCH AS COCONUT OIL, IN THE
DIET

"Saturated fat is necessary for proper bone development and for the
prevention of osteoporosis. Many people are eating low fat diets, and
especially low saturated fat diets, and taking huge amounts of calcium
supplements, yet they still suffer from osteoporosis. For calcium to
be effectively incorporated into the bones at least 50% of the fats in
the diet need to be saturated.

If you want to prevent osteoporosis you need to be eating saturated
fat"

ONE YEAR ON

It is now a year down the track and here I am reporting on my
progress. It hasn't all been smooth sailing but give or take the odd
