Food Intolerance Symptoms?

September 15, 2010
From: Ann-Marie Johansson M.Sc.

Dear Friend,

Tummy ache, growth problems and waking up often during the night are three common symptoms of a dairy or gluten intolerance. When I finally realized that a dairy and gluten intolerance was the reason my middle daughter woke up all night, I was so sleep deprived I didn't have the energy to change her diet. Later on when I had amassed all the information I needed to help her I swore that one day I would do what I could to make this information easily available to other mothers facing the same problem. Here it is!

In fact they may even be tastier that their dairy and gluten containing equivalents.

Baking Gluten Free Can Be Tricky!

Gluten free baked goods often turn out dry and tasteless. And if you have been searching for gluten free recipes you have probably already found that most of them contain unusual ingredients you don't know where to find like amaranth flour and xantan gum.

I didn't want to have to mix several types of flour, and try and find strange ingredients. After a long process of trial and error I have come up with a lot of EASY recipes and tips that I want to share with you. These recipes aren't second best. In fact they may even be tastier than their dairy and gluten containing equivalents. My oldest daughter, who can eat dairy and gluten, asked for my dairy and gluten free peanut butter chocolate chip cookies to be served at her birthday party since she preferred it to the store bought dairy and gluten variety.

Since fifty percent of people with a gluten intolerance are also sensitive to dairy products, these recipes are also dairy free. But if your kids are OK with dairy products you just replace the milk and butter substitutes with the real thing.

"I've been a pediatrician since 2002 and have diagnosed many children with suspected food allergies. But it wasn't until I was on a dairy free diet myself, while I was breast feeding my son, that I realized how much it effects everyday life. Thanks to Ann-Marie's dairy free chocolate cake, my chocolate cravings were satisfied, and I had a great cake to offer visiting friends and family. All these wonderful recipes will make life easier for me and many others. I look forward to offering this treasure of recipes to my gluten- or dairy intolerant patients. My Story:

Being a mother of three wonderful girls I am truly blessed! Lova, Linn and My give me so much love and joy, and teach me so many lesson's. However things haven't always been easy in our lives. Unfortunately all of them had colic as babies. My oldest daughter started sleeping better as she grew older, but not my middle daughter Linn.

I spent countless nights walking around the house with Linn in my arms, with her crying hysterically out of pain and with me sobbing helplessly as well since I couldn't help her. To see her in so much agony and not being able to help and find out what was wrong made me feel like a terrible mother.

The doctors at our local healthcare center told us that Linn had colic and that it would eventually pass. When she grew older and was still waking up 15 – 40 times a night, the problem according to them was that I hadn't taught her to sleep by herself and I was given brochures about different sleeping techniques. No one seemed to believe me about the terrible pains she suffered from.

Since my academic background is in immunology and I had written my master thesis about allergy, I quite early on presumed that the problem might be due to a gluten intolerance since Linn had tantrums, an enormous belly and tiny limbs, and most importantly her problems increased when she started eating bread and pasta.

However it is one thing to know something and another thing altogether to take action! In real life I had two baby daughter's, born only 16 months apart, and I was just trying to make it through the day. When Linn was one I finally managed to convince the doctor to send us to a specialist, however the food allergy test (IgE) didn't show anything.

Was I wrong? Maybe her problems weren't caused by a food sensitivity? I was beginning to doubt myself. Since I was pregnant with her sister My in the third trimester I felt that in order to survive we needed to fix this right now. So I made one last effort and found a nurse in my city who was cooperating with a company in the US providing IgG food allergy tests.

I knew from my studies in immunology that not all oversensitivity reactions show up in IgE tests. Instead an IgG test can help a diagnosis (this is however debated among physicians). After two weeks we received an answer which showed a positive result for milk, egg and also whey, barley and wheat. Since we didn't have the energy to change her diet completely we removed milk and egg and skipped sandwiches and pasta, and went within a month from 15-40 wake ups per night to 3-5 wake ups, which we felt was quite endurable.

After a year we removed all gluten from her diet and almost immediately we had a daughter who slept all through the night! After six months without any gluten she grew twice as much as she did the whole year before. And her tantrums became fewer and fewer. After a year she was like a different kid, so much more happy and content with life.

"In my job as a preschool teacher I often come in contact with children suffering from food allergies. But it wasn't until my daughter was diagnosed with gluten intolerance that I realized how difficult it is to completely change a child’s diet; to keep track of what is OK to eat and what isn't. Before we had a diagnosis, life as a parent was very difficult since we didn't know the cause of her symptoms. And when we received the diagnosis we wanted to help her as quickly as possible, but finding information and fun recipes wasn't easy. These books have been a great help, and it feels good to know that they are written by someone who understands what we are going through and who has been there herself. Thank you for a wonderful book!"

Linnea Bergman, preschool teacher at Happy Kids Education and Annie's mother
"When Ann-Marie said she was creating a book with gluten- and dairy free recipes, I thought it was a good idea, but didn't think it applied to me since I and my family don't suffer from food allergies. But then I tried several of the cakes and they taste heavenly! These will be my favorite recipes and the ones I use when kids come to visit – and not just kids with food allergies!"

Ingela Vågsund
"At my daughters school her name is on a long list of names of children who have a food allergy. Birthday parties are always a challenge to find recipes that are suitable for all. This cookbook is fantastic - gone are the days of needing to make three cakes for one party. My family have tried several of the recipes and loved them. My husband was surprised when I told him that it was not a 'regular' cake he was eating - pleasantly surprised. The blueberry muffins were amongst my favorites, light and fluffy with a delicious topping - hard to stop at one! The date cake was moist and winner for both the kids and adults - served warm with lactose free ice-cream it makes for a wonderful winter dessert. Thanks Ann-Marie for putting together your knowledge and experience and sharing it with us!!"
