GLUTEN FREE LIVING DOESN'T NEED TO BE HARD!

HOW WE BECAME EXPERTS AT GLUTEN FREE LIVING:

As the parents of an autistic child we had many nutrition experts
and naturopaths recommend that we put our son on a gluten free diet.
When we started looking into it five years ago we were overwhelmed. At
that time it seemed there were few choices on the market for packaged
GF food and we had no idea how to make many of his favorite meals
gluten free. And what about the rest of the family? How were we going
to balance out everyone's needs? So the journey began.

IT COSTS HOW MUCH? OUCH!

We began to look for good gluten free alternatives on store shelves
and found few options. Some things, such as pasta, were easy to come
by but others were not. One of our son's favorite things is chicken
nuggets. We found quite a few GF versions out there, but none that he
would eat, and they cost a fortune. Even when we did find good GF
foods on store shelves we found that cost was a huge issue. A simple
pancake and waffle mix was as much as $8 per pound and the
aforementioned chicken nuggets, which tasted like sawdust, were as
much as $12 per pound. There had to be a better way!

SOMEONE ACTUALLY EATS THIS STUFF?

Our quest shifted from buying the things our son liked to making
them. We search for gluten free recipes online and we bought gluten
free cookbooks (which were hard to find back then), but found almost
all of the recipes to be, shall we say, lacking in the flavor
department. Most of them were almost inedible. We knew there had to be
a better way, so we put on our aprons and began to create.

WE CREATED RECIPES FOR THE WHOLE FAMILY!

As a result of many, many failed attempts (cooking without gluten
is no easy trick) we struck on some recipes that became family
favorites. In the process we determined that it is easy to get into
the rut of thinking only gluten free. What we mean by that is, we
often didn't think of meal options that would not naturally contain
gluten. We realized that, for the sanity of the entire family, we
needed meals that fit everyone's needs. Yes, you will find recipes
like chicken nuggets, key lime pie, French bread, waffles and corn
bread... but you will also find recipes for marinated flank steak (a
huge family favorite), chop chop salad, lemon dill salmon and cheesy
potato soup. In short, we wanted our meals to be well-rounded.
