1 ripe avocado
3 small tomatoes (like the tomatoes on the vine)


2 stalks of celery
1 bell pepper (any color)
1 clove of garlic
Juice of one lime
Sea salt & freshly ground pepper to taste
Cilantro, parsley or any fresh herbs you like to taste


Juice the lime into a bowl, add the flesh from the avocado, the garlic, salt and pepper and mix together really well. Dice the veggies and toss into the bowl, stirring to mix well. Throw a heaping spoonful of that mixture onto the top of a salad and enjoy!

It’s also great in omelets or stirred into a bowl of soup, and is a great way to add fresh veggies to your day easily and quickly. Store in the refrigerator in a tightly-covered container for 4-5 days or until you’ve used it up, and then make more!

And while we’re on the subject of salad dressings…here’s another idea with endless variations!

Juice a lemon or a lime
Add as much extra-virgin olive oil as you have juice
Add a pinch of sea salt, freshly ground pepper to taste, and whatever fresh herbs you have on hand that you like. Whisk, use some on a salad or as a dip for fresh veggies, and refrigerate the rest. YUM…who needs all the chemicals and artificial flavors in bottled dressings when you can quickly and easily make something so fresh and good?

Here’s a really good combination of veggies for a colorful, flavor-filled, quick side dish or main course. This is two servings as a side dish or one big one as a main course.

1 T extra-virgin olive oil or grape seed oil
1 bell pepper, any color, diced
2 stalk celery, diced
10-12 baby carrots, sliced
2 or three green onions, sliced
10-12 mushrooms, Crimini or white, trimmed and sliced
1 clove garlic, diced or mashed
Sea salt & freshly ground pepper to taste


In a medium sauté pan over medium heat, combine the oil, carrots & celery. Cook for a minute or two, until the celery begins to get soft. Add the bell peppers and green onions and cook for about 4-5 minutes or until the green onions begin to wilt and get translucent. Add the mushrooms, garlic, salt and pepper, and stir until the mushrooms have released their juices. Serve hot or cold…it’s great either way. Double, triple, or quadruple the recipe if you’d like so you’ll have leftovers…yum!
