CHINESE CHICKEN

A quick, easy and delicious recipe, tasty enough to serve company.

If you prefer, you can use chicken pieces instead of a whole
chicken, just scatter the lemon pieces across the bottom of the
crock-pot and place the chicken pieces over the top.

Serve the chicken over rice with stir fried or steamed broccoli on
the side.

Serves 4-6

_INGREDIENTS _

_ QUANTITIES _

1 whole chicken

5 lb Imperial & American _or _2 kilo Metric

1 whole lemon, chopped

8 pieces

dark soy sauce

1 tablespoon

malt vinegar

1 tablespoon

brown sugar

1 tablespoon

tomato paste

2 tablespoons

ground ginger

teaspoon

toasted sesame seeds

3 tablespoons

1.

Preheat crock-pot while you assemble ingredients.

2.

Place lemon inside chicken and put into crock-pot.

3.

In a small bowl combine soy sauce, vinegar, brown sugar, tomato
paste and ground ginger and stir until smooth.

4.

Use a pastry brush and smear this mixture over the chicken in the
crock-pot, and sprinkle with sesame seeds.

5.

Cover and cook on low/auto for 7-8 or on high for 3 -4 hours.

EXTREMELY EASY
POT ROAST

Here the meat cooks in the moist heat of the crock pot, and is
especially suitable for tougher, cheaper cuts of meat. The long slow
cooking breaks down the muscle and gristle into melting tender
succulence.

You decide what soup you prefer, tomato, oxtail, mushroom, your
choice. You can add potatoes, carrots, onions or any root vegetables
that you like at the beginning of cooking.

If you like a lot of gravy use the cup of water and thicken at the
end of cooking with potato flakes or cornstarch/corn flour, or use
half a cup of water and don't bother to thicken.

Serves 6-8

_ INGREDIENTS _

lean, brisket, topside, rump

3-4 lb/2kg

soup concentrate, tomato/mushroom etc

1 medium can/454g

water

chili sauce/Worcestershire sauce

good shake, to taste

1.

If using vegetables cut thickly and place in bottom of crock pot.

Place meat on top and pour over canned soup.

3.

Add water and chili sauce or Worcestershire sauce.

4.

Cover and cook on low/auto 8-10 hours of high 5-6 hours.
